Ingredients
- 2 large stalks celery, diced
- 1 onion, diced
- 28 ounces smoked sausage, cut into ¼-inch slices
- 3 cloves garlic, chopped
- 1 red bell pepper, diced
- 1 tablespoon chopped parsley
- 1 teaspoon oregano
- 1 teaspoon thyme
- ½ teaspoon paprika
- ½ cup Coca-Cola
- ½ cup dry white wine
- 1 can (14 ounces) diced tomatoes, undrained
- 3 cups water
- 1-pound uncooked medium shrimp, peeled and deveined
- 1 bay leaf
- 1 ½ cups uncooked long-grain white rice
Directions
- COMBINE celery, onion, and sausage in large skillet over medium-high heat and cook for 5 minutes. Add garlic and bell pepper and stir; cook 3 to 4 minutes. Add parsley, oregano, thyme, and paprika; stir and cook 1 minute.
- ADD Coca-Cola, wine, tomatoes and their juice, water, shrimp, bay leaf, and rice. Increase to high heat, bring to a boil, then reduce and simmer, covered, 25 minutes or until rice is tender. Remove bay leaf before serving.
