Ingredients
- 3 pounds cut-up chicken or chicken breasts, thighs, and legs
- 1/2 cup all-purpose flour
- 2 teaspoons salt
- 1/3 cup oil
- 1/2 cup onion, finely diced
- 1/2 cup celery, finely diced
- 1/2 cup green bell pepper, finely diced
- 1 cup ketchup
- 1 cup Coca-Cola
- 2 tablespoons Worcestershire sauce
- 1 tablespoon salt
- 1/2 teaspoon hickory smoked salt
- 1/2 teaspoon dried basil leaves
- 1/2 teaspoon chili powder
- 1/8 teaspoon black pepper
Directions
- Rinse chicken pieces; pat dry. Coat chicken with flour and 2 teaspoons of salt. Brown pieces on all sides in hot oil, then place pieces in a 3-quart casserole dish (discard drippings).
- Combine remaining ingredients, mix well. Spoon sauce over chicken, covering all pieces. Cover casserole, bake at 350 degrees Fahrenheit about 1 hour and 15 minutes, or until chicken is fork tender.
